Whole brisket from Costco, trimmed. Used Valentina hot sauce as the binder and Kinder's fajita seasoning.

Smoked at 225 to 170 internal; wrapped and kept going to 210, then let it sit there for a couple hours. My intention was to overcook it a bit so it would be fork tender.

I did forget to add beef broth and orange juice when wrapping.

Sliced into 1" strips, and cubed the stubborn bits. Fried some bacon in a Dutch oven, then sauteed onions, peppers (bell and ripe jalapeno) and garlic in the bacon fat. Added brisket, 2 cans beans, 3 cans RoTel, 2 cans tomato sauce, and 1 can corn.

Added 2 bottles amber ale and 1/2 cup leftover coffee for liquid.

Seasoned with chili powder and paprika to taste. Added a little of my own chili powder (smoked, dried, and pulverized jalapenos, serranos, and poblanos) as well as a tablespoon of brown sugar.

Now it's simmering, already tastes delicious, and smells amazing.
