Recipe for Mediterranean Chicken, Spinach, and Feta Casserole
2 tablespoons oil
1 cup chopped onions
1 cup sweet bell peppers,red, orange, yellow
Chopped
1 lb ground chicken
4 ounces spinach
1 cup plain Greek yogurt
6 ounces feta cheese
1/2 cup Kalamata olives
1/2 cup mushrooms
1 cup shredded Parmesan cheese
1/2 cup grape tomatoes, halved
Salt, pepper, garlic w to taste

Preheat oven to 425 degrees

In cast iron skillet, heat oil on medium high. Add onions , peppers, mushrooms and cook for 3-4 minutes. Add ground chicken and cooked until all pink is gone. Add spinach and cook until just wilted
In a bowl, mix yogurt, feta, half Parmesan and olives and stir well
Add to chicken mixture and stir in well
Sprinkle other half of Parmesan on top and spread tomato halves on top.
Bake 15-20 minutes or until golden and bubbly.

Garnish with parsley

  1. Kalamata is a beautiful part of Greece. It is covered with olive trees. When I was there I looked at all of those trees and I wondered if I had eaten olives off of those trees❤
