Shhhh. Okay, so what you need to know about smoking …. it is very time consuming and very difficult… try to remember that when you are telling people, and try to keep a straight face! Those 10 to 12 hour smoking times are real, but your actual time at the grill may be about 30 minutes, and any removal to wrap and put a pork butt or brsket back on for the remainder of the cook.
