    Looks good , could be tighter on the plate. Piping could be a bit more even over the top.

    Looks tasty – Making profiteroles is such an art and delicate process. I would look for a final presentation that highlights those qualities. For example: smaller plate, 3 profiteroles, use a piping bag with a small tip instead of a spoon, a perfectly shaped garnish (not a crumble). Based on the texture of the red stuff, i think you could run a knife in hot water and cut out perfect rhombus. Just a few thoughts – looks very tasty!
