Lobster Tails
– Salt
– Pepper
– Garlic powder
– Cajun seasoning
– Olive oil

Mixture
– 2 tablespoons of mayonnaise
– Lemon juice
– Celery, sliced
– Chives, chopped
– Salt

Potato chips
– Yukon gold potatoes, thinly sliced
– Salt
– Pepper
– Garlic powder
– Paprika
– Olive oil

Assembly
– Hot dog buns
– Butter lettuce (optional)
– Chives, for garnish

Directions

Start out by seasoning your lobster meat with salt, pepper, garlic powder and cajun seasoning. Use olive oil as a binder and grill on high heat, flipping once. Cook lobster until it reaches an internal of 140. While lobster is cooking, season your potatoes with salt, pepper, garlic powder, paprika and olive oil. Bake at 425 on convect for 20 minutes or until potatoes are crispy. After lobster is done cooking, cut into bite size pieces. Add chopped lobster meat to bowl along with chopped celery and chives. Add mayonnaise, lemon juice and season with salt and pepper. Give it a mix and set aside. Toast your hot dog buns and add butter lettuce, lobster mixture and garnish with chives. Serve with your crispy potatoes and enjoy!
