I recently purchased a Komodo Joe classic 3 and I am loving this grill! I have been getting used to using air flow to control temperature instead of my old electric smoker that I used previously. I live in Alaska and the masterbuilt electric smoker that I used would have a hard time keeping temperature. Well I don’t have that issue anymore. It doesn’t matter if Its -4 outside this thing holds temperature so much better than anything else I ever tried or heard of.

I smoked this using indirect heat at 225 until I got the steaks up to 120. I pulled them out and let them rest while I took off one of my indirect plates and let my grill get piping hot. 600 degrees. I used the reversible cast iron grate to see how the grill marks would turn out and for my first time using it I am very happy with the results. I baked the potato’s in the grill as well. Over cooked the skin a bit so next time I will try putting the potatoes in earlier so I can cook them at a lower temperature and take them off before turning up the heat!
