Recent submission to a competition. Al pastor empanada, dehydrated Cilantro leaves, grilled pineapple, Cilantro sauce broken with parsley oil.

Everything looks and sounds delicious but why are you putting an empanada in sauce.

Those empanadas look banging and overall the dish sounds like it slaps but I do not like the look of the uncontrolled pool of sauce and I’m not sure exactly how I’m meant to get that pineapple into my mouth along with a bite of empanada without resorting to the use of a fork. I guess it’s ok to expect upscaled street food to be eaten with a fork and knife but something about it rubs me the wrong way. I think it kinda takes away from the fun, taking the dish farther away from memories of eating empanadas in bayfront park.

I think i would have the pineapple cut into slightly bigger chunks and add pickled onion

I love that color contrast, but the focal point is off center and it’s just crispy bread. Try adding some small garnishes or swirls of a contrasting white sauce to move the eye around the dish.
