
Going to smoke a Prime rib on Christmas Eve this year based on this Alton Brown recipe:

Any tips on adjusting it for the Joe?
Main questions:
Is 250 a good temp? I was initially thinking 225/35
Any recommendations for catching drippings while avoiding them just cooking on the heat deflector?
After resting – should I do the high temp right in the joe? I have a propane grill I could sear with as well
