    Holodets is a traditional dish of my people (Ukraine) and is a kind of aspic. And I love sardines. That being said, I would *not* eat this.

    There actually *are* fish tinned in aspic out there. Granted, SlowJabroni reviewed the only one I’ve known anyone to try, and he marveled over how anyone could ever enjoy it. But it actually wasn’t clear to me whether it was a bad tin, bad recipe/process/fish/brand, or irrevocably bad concept period. So I’m sorry no one even took a thin shaving off to test out! I probably wouldn’t like the texture by itself at least, but I’d be in a swirl of both eagerness to try it and accepting of a cruel fate that compels things like that into me. I’ve been fascinated by and relatively open-minded toward aspics for quite a while, but still haven’t adequately dared myself into executing any of my ideas for it. I’ve had some totally earnest ones too!

    Actually, I bet I *could* like a tinned lightly smoked™️ sardine aspic, if sliced thin with a dangerously sharp knife and placed between buttered dark rye with maybe sliced beef, a hot + sweet pepper relish or well-seasoned kraut, and whole grain mustard. I can’t have cheese anymore, but if I could then I think I’d want one that’s a little funky or perhaps horseradish-y in there too—horseradish mustard blended with a regular wholegrain perhaps. 

    I mean if everything else is done right, I’d probably finish it without a hitch even if I didn’t leave excited to repeat the experience. This could probably be reinterpreted into a canapé or crostini thing too. Sorry, I love taking food like this too seriously.
