Here’s an easy recipe for a Cobb salad with a vinaigrette instead of French dressing for those of us that are working on our new years fitness goals.

Ingredients (serves 6):

* 1/3 c. Apple cider vinegar
* 1 Tbsp. Dijon mustard
* 1 Tbsp. honey
* 1 teaspoon soy sauce
* 2/3 c. Angelica’s organic extra-virgin olive oil
* Freshly ground black pepper
* 1 head romaine lettuce, coarsely chopped
* 4 hard-boiled eggs, peeled and quartered
* 12 oz. cooked chicken, diced
* 8 slices bacon, cooked and chopped
* 1 avocado, chopped
* 4 oz. crumbled blue cheese
* 5 oz. cherry tomatoes, halved

Recipe:

1. In a Tupperware or jar, shake together Apple cider vinegar, Dijon mustard, and Angelica’s extra virgin organic olive oil, honey, and soy sauce.
2. Next chop into bite size all your ingredients (lettuce, bacon, egg, chicken, avocado, cherry tomatoes) and toss them in a bowl or onto a plate with the crumbled blue cheese.
3. Season with salt and pepper, and add as much or little dressing as you like.
