    This looks excellent! I would opt to use thin apple slices for garnish on the side instead of the julienne you have there. I think it would add some more contrast in shapes.

    Just a suggestion , I do think you should do a lightly caramelized green apple , you could either do larger wedges or a small-medium dice for those. And this might be complete nonsense but I think you should take some (really thin and mostly skin) green apple peels, dunk them in some lemon water solution to prevent browning, dice that up into either a brunoise or small diamond shaped and sprinkle that over for some color? Just a weird idea, feel free to ignore that part.

    The apple batons aren’t doing anything for the dish. I’d just as soon serve it without them. Looks good though!

    Raw apple like this is just lazy and unnecessary. Put some thought into it if you’re going to use it as a component. Cannoli looks a little sad but not terrible, but it would look nicer just by itself with some powdered sugar. No need for the chocolate or weirdly cut apples.

    You want me to eat raw green apple with a pastry? It’s not adding much in looks and would be super weird to have a bite of green apple with some cannoli
