The 1950s editions of all the Culinary Arts Institute’s cookbooklets (that were sold in large binders called Cooking Magic vol 1 and 2, or as a large hardcover called the CAI Encyclopedic Cookbook) were instrumental in my learning to cook in my late teens and early adulthood in the 2000s. I still make so many recipes from these booklets 20 years later and have many memorized lol

I love these. I’m lucky enough to have 2 complete sets, my moms and one from a thrift store that I got for $3.00
