Preparation

  1. Preheat the oven to broil. Soak 20 skewers in cold water for 20 minutes. In the bowl of a food processor, combine the shrimp, salt, sugar and pepper. Pulse, scraping down the sides as necessary, until the shrimp is minced.
  2. Drain the skewers and pat dry. Keeping your hands well coated with oil, form about 2 teaspoons of the mousse mixture into a sausage shape on the tip of each skewer. Place the skewers on a baking sheet and broil at least 4 inches from the broiler, for 2 to 3 minutes. Serve immediately.
