It looks nice but one of the beauties of the way tonkatsu is traditionally served is that it stays crispy, being served on a little wire rack and without any sauce on top.
Since moisture is the enemy of crispiness, when you serve it directly on a plate, the bottom will get soggy due to it steaming itself without airflow, and the top will be soggy due to you pre-smothering it with sauce.
Personally I don’t think a pretty plating is worth the tonkatsu not being crispy, as that’s a defining feature of the dish

Never sauce on a crispy item or beautiful sear. What’s the purpose of that hard work if it’s gonna be ruined by sauce?
