Mold spores?? Nothing worse than thick chocolate shell? What are you on even about? The only bad parts are if you have bad quality chocolate and the state of your strawberries. Also too thick chocolate will cause strawberries to not coat well but it's not bad.

When you put the strawberrys in the fridge put some plastic wrap over the top so it doesn't taste like the fridge

Also temper the chocolate! in a microwave works, but it’s best in a double boiler.
