Yep, nice composition in itself, but I want to see the scallops. They could repeat the shape of the persimmon slices.

Honestly I feel like a triangle might be the move to help fill out the plate more. Or maybe even a fourth slice of persimmon and lay them in a diamond shape

Good idea chef, could be better presented tho, your main thing has to be the scallop not the fruit. And also as a ceviche aficionado, it looks like it just been pickled in lime juice and nothing else, I would love to see some sprinkles of ground pepper or some of the colors of Peruvian ají! (I’m copying your idea soon btw)

Looking good. I would avoid getting that close to the edges of the plate though. Frame your art. 🙂
