Title basically says it all. Tried 321s
Homemade AP seasoning, popped on Woodridge pro for 3 hours at 185, wrapped with butter, brown sugar, and honey and back on smoker for 2 hours at 225, unwrapped and mopped homemade sauce on one time and back on smoker for 1 hour.

Provided wired probe thermometer never got over 170° internal. They were delicious believe me, but not fall off the bone. I was aiming for 200° internal Should I have ignored the 321 timing and followed the probe? I feel like 3 hours unwrapped, 3 hours wrapped, and 2 hours unwrapped might get me where I want it to be internally next time at those low and slow temps. Thoughts??

    321 is a great starter method for people who don’t know what they’re doing.

    Don’t wrap! There’s no need.

  4. Something has gone wrong if your ribs take 8 hours. Try 225 unwrapped for about 3.5 hours, spritzing every 90 minutes. My favorite way to go.

    2 hours @ 275 in the oven

    Prefect fall off the bone ribs. If you want to crisp up the bark through on the grill for a couple minutes a side after unwrapping.
