    I always pass on corporate beef. As a executive chef for almost 4 decades I know things.

    If your chef won’t eat it thats called a sign.

    It’s a decent price at $5.98 and trimmed. However, my local Vons store has it for $3.99/lb for this week only and it’s in trimmed.

    It’s on sale in February because it’s a summertime cut that loves the high, dry heat of a bbq. In summer, chuck roast goes on sale because steers produce the same amount of it, but no one’s making a hearty stew in July.
