
Still new to smoking. Been grilling for 40 years but the smoke has been a new world. Wanted to hit and stick 225. So did a quick smoke in some pork tenderloin. Found a good rub recipe and tried. Started with way less coal. Then did a much longer time letting it light and pre burn . Actually went for a bike ride and came back to 175 and was able to bring it up slowly from there. Think the thing I did differently that really helped was letting the deflector plates pre heat too. Was able to smoke these at 225 for about 1 hour 20 minutes and they turned out great. Was able to vacuum seal the extras for easy dinners.
