Special trim is miscellaneous lean cuts left over from Chuck, short rib, flank, etc. Everytime I have bought it, it was mostly flank and skirt slabs.

A quick google search, which I suggest you try sometime says “Trim pieces from any primal section other than Shanks or Heels that are at least 8 square inches on one side and no less than 1.5 inches thick at any point. Bones and fat surface should be removed. Most often used for further processing into ingredient beef.”

It says trim so most likely for grinding. Its what meat cutters set aside while theyre cutting all day. Its standard stuff. Its prolly all squished together in the packaging so its hard to see that its in chunks.
If anyone wants to grind a bunch of fresh meat and freeze it at home, this would be nice stuff to use. 5 bux a pound is a decent price nowadays. Especially for angus.

You’ll often see them use interchangeably, even if you’re not buying from Tyson because they’ve been used so interchangeably for so long now.
So special trim = lifter meat
