Sous vide for the win for tender juicy pork loin chops. Cut one and a half inches thick, 130F for 1-2 hours then seared in a smoking hot cast iron.

I like them but I find Lamb chops to be tastier. But I live in Australia so I might be a bit biased!

The heritage breeds rock with a fattiness that’s been bred out of commercial hogs. The duroc and Berkshire are my favorites and preferable to steak both in taste and price. Bone in the way to fly.

I think it’s because they can be tricky to cook right. People are scared of getting sick from under cooking, so they overcook, and then they’re dry and tough.

The government suggested people overcook them because of trichinosis; then in the 80s and 90s they bred all these fat out of hogs. Most Americans have only had dry, tough overcooked pork chops. If you brine them and cook them med rare-med, they’re good.
