Cooked at 225 until internal temp hit 145. Then turned it up to 450 to sear it and added a pinch of salt. Marinade of honey, black pepper, thyme, apple juice and brown sugar

Any issue with drying out? I’m a big sous vide fan for tenderloins. But I always love an excuse to smoke
