Sorry – I’m not super familiar with this portion. How would I prep and cook this?

    What continent are we talking here? Sometimes I hear the Brits call sirloin rump, and a strip a sirloin, but in NE Ohio, I believe what you have is a sirloin cap, otherwise, yes, known as pincanha. FWIW, rumps are bottom rounds here.

    It might be the cap, but there’s way too much fat trimmed off for it to be a super good picanha, doesn’t quite have the shape I’m familiar with.

    Picanha is the rump cap, this looks like either a sirloin rump or rump roast. Either that or they just trimmed too much off the cap.
