    That’s more than likely boneless beef back ribs, not the cap.

    No way that lean cut is ribeye. That looks lean enough that searing 1 minute a side is all you could do to even have a shot at tender in short cooking them. I agree with the comment that they look like boneless back ribs.

    As somebody who admires ribeye cap steaks at Costco. There’s no way that is them. There’s not a spec of fat, and the cost is way too cheap. Even at Costco it’s like 24/lbs for ribeye cap steaks.
