Had some of my deer turned into summer sausage in November or December. Obviously kept frozen, but the outside is tough almost like leather. Cut it off and we’re good or are they past due the trash can?

Sausage casing? Most sausage is made in a casing. If you can peel it off cleanly, it’s fine.

You gotta peel the casing off of summer sausage. If it was frozen it’s double fine unless it’s just freezer burnt. There’s so many nitrites in summer sausage it should be shelf stable.

Eat half of it and wait 35/40 minutes. If you don’t see colors or the walls breathing. Eat the rest

Wintergreen’s not bad. After a while you get accustomed to that good burn, spearmint and peppermint have a little more kick when you get used to wintergreen. Try a rotation.
