Chuck roast is 3 days past sell by. It’s still firm and no oxidation and it’s not slimy, but it has a mild mac & cheese like scent? Is it still good?

    A little scent is ok. You won’t smell it after seasoning and cooking

    Sell by is not use by. It’s good for a week after sell by date

    I would still use it but I routinely age beef so take whatever I say as a personal preference.. I would do the following: Rinse the beef thoroughly to get the surface crap off, then dry it thoroughly. Salt liberally front, back, and sides and leave in the fridge for a few hours. There will be some moisture on the plate so dry again and proceed with the recipe. The odor should disappear after this process.

    I always thought it smelled like butter, but I can agree with cheese, as well. That’s when it’s gonna be the best, imo.

    I dry age meat in my fridge for weeks at a time all the time.

    3 days is basically nothing.

    I would wash it in cold water and vinegar first, then as long as there are no signs of spoilage use it accordingly

    You got some awesome beef right there. Only 1 in 10 angus cattle make it into the Certified Angus Beef Prime program. I am a CAB specialist for my company. We routinely wet age ribeyes for at least 21 days but up to 60 (we age at 29 degrees, at the warehouse). Good stuff!
