SPICY ITALIAN + TORTELLINI SOUP // a recipe from my mother in law Julie that is a constant family fav in our home – kids included!
INGREDIENTS:
Drizzle oliveoil
1 lb spicy Italian sausage (no casing)
3-4 large cloves garlic, minced
1 sweet onion, diced
Italian seasoning, salt & pepper – measure with your heart
2-3 large spoonfuls of flour
2.5 containers chicken stock (approx 80 oz)
1 can tomato sauce
Parmesan cheese rind
1 20 oz package cheese tortellini
3-4 handfuls baby spinach (or chopped kale!)
3/4 cup heavy cream
Shredded basil + parmesan to garnish
INSTRUCTIONS:
1) Heat olive oil in Dutch oven on stovetop. Cook sausage until browned, draining grease, then add garlic, onion, salt, pepper & Italian seasoning and cook until onions are translucent.
2) Add in flour and thoroughly mix. Pour in chicken stock, tomato sauce & parmesan rind and bring to a boil, then simmer about 15 minutes. Add in tortellini until noodles are al dente, then heavy cream and spinach until wilted. Adjust seasoning with salt.& pepper to taste.
3) Pour soup into a bowl, then sprinkle shredded basil + parmesan on top. Serve and enjoy!
