My mother’s 60th birthday cake. White chocolate cheesecake with chocolate ganache and ahh… Italian meringue on top.

The recipe said to put 2 tablespoons of ganache into the meringue, I did and then it went goopy.

How do I make this look nicer?

The middle part is where the blue “60” candles will go.

    Someone else might have a better idea but my first thought is graze a knife over it to make it look messy on purpose. Test on a small bit on the back. Maybe add fruit on the top, depending on the flavour you’ve used. I’ll look for a picture to explain better hold on

    If the ganache goes harder in the fridge, you can clean it up, then as the other commenter said make the meringue look messier on purpose and maybe add some decorative flowers?

    I would do sprinkles, crumbs, or edible flowers, or berries. Also pipe a border on the bottom. Otherwise it looks delicious to me.

    I would first cover the middle, the candles can sit in the meringue. Then, I would smear the meringue so it’s purposely messy. Then I would let the ganache get hard in the fridge. Take a cup of hot water and a small metal spoon. You can make textured horizontal or vertical lines in the ganache by heating the spoon in the hot water, drying the spoon, then swiping it over the surface of the ganache. If you want a bottom border, you can use white chocolate chips or pipe some fresh meringue. It looks delicious.
