If I don't want to search the food I am cooking, do I leave the knobs in the Sear Zone off?

It really depends on what you’re trying to go for. If you want a good sear on the meat have them on once you get the sear you want shut them off and cook indirect (opposite the heat). Or do the opposite if you’d rather sear last. Either way at some point you should cook indirect.

Does the red button not belong between the two? And the one in between to the left? That confuses me 😅

Former weber assembler here, you do in fact have the knobs mixed up. The red knob is for the seat burner that’s between the two furthest right silver ones.
