That said, the wing places near me suck, and I don’t have a deep frier.

hmm, your photos gave me an idea! a different approach to a cantonese dish (salt and pepper wings). i hate deep frying shit at home and the mess that comes with it. instead of frying them, i’ll just grill them and crisp them up in an air fryer. and then finish them in a wok. thanks!!
