Atsara in the Making
Atsara, a popular Filipino pickled papaya dish, is a delightful blend of sweet, sour, and tangy flavors. The process begins with shredding unripe papaya, which is then soaked in salt to draw out excess moisture. After rinsing and squeezing out the liquid, the papaya is mixed with thinly sliced carrots, bell peppers, onions, ginger, and garlic. A pickling solution made of vinegar, sugar, and sometimes a touch of salt is boiled and poured over the vegetables, allowing the flavors to meld together. The mixture is then left to cool before being stored in sterilized jars. After a few days of fermentation, the atsara develops its signature taste, making it a perfect accompaniment to grilled or fried dishes.
