I was pretty happy with this.
It was thrown together with ingredients in the freezer and fridge. I’d prefer a nice chop for some fat, but otherwise it was decent.

    That pork is cooked very nicely, so no need to smother it in a sauce, but a little drizzle or some caramelized matchsticks of the apple wouldn’t hurt. All in all it’s a very composed dish. 👏🏾

    It’s a nice dish the endive seems a bit haphazard but really perfect cook on the pork and squash fondant sounds delicious. My thought would be a nice apple cider braise on the endive then halved lengthwise?
