And yes – I know that is a vegetable cleaver. So sue me! And I had to combine 2 photos into one since ‘old reddit’ doesn’t allow posting of more than one photo (and ‘new new reddit’ doesn’t work for many of us, and they have made ZERO progress on fixing anything).

How was the fat? I would’ve trimmed it or rendered it in a pan first.
Some fat isn’t succulent unless it gets denatured with enough heat first
