Why does the “tuna salad” look clear?

My bad, y’all. It’s a clear tuile, shaped into a cup. We fill it with our own tuna salad( it doesn’t really scream fine dining, I know), but it’s an amuse bouche. It’s not meant to be a mindbender. Apologies.
