Picaña is the rump cap so it’s supposed to be a bit more lean, the fact that it’s prime shows it needs to have more fat”marbling” which it certainly looks like . Honestly it looks like you got a pretty good piece of meat but it’s not worth the price in the USA because it’s supposed to be a cheap cut unfortunately here it’s a specialty cut so you usually get it at an unfair price. If you’re in dude cut it down the middle and see if the. Marbling goes through nicely.

USDA Grading isn’t a guarantee of anything. I’ve seen choice with marbling approaching the level of wagyu and I’ve seen prime looking closer to select.

Quality grade aka “choice or prime” is based on two factors age of animal and marbling between the 12th and 13th rib, which is the ribeye. Prime would be a steer/heifer below 30 months of age and high amount of marbling in the rib between the 12th and 13th.

Looks great, personally I always get choice because there’s so much fat on top and I love it, 6/pound at Costco and better than everything bar ribeye and filet imo.
