    Not my first time with this recipe. Not taking credit either. Not my best cut. Flank had a thick fatty vein on each side and cut to shallow in one spot while I was filleting it.

    I did change it up a little bit though. Where it asked for a small amount of sun dried tomatoes, I stepped it up and added a bunch on top of the spinach.

    I used sun dried tomato pesto and it was delicious.

    Next time I’ll go for a more Mediterranean slam and use feta cheese and basil pesto instead.

    In either case, this is a great dish!
