Healthy and easy to put together creamy
Corn pasta, the perfect weeknight recipe for an easy dinner

Ingredients:
12 oz (340 g) pasta (penne, or rigatoni)
2 tbsp (30 ml) olive oil or butter
1 small onion, finely sliced
2 cloves garlic, minced
2 corn cobs, slice the kernels off
½ cup (120 ml) reserved pasta water (more if needed)
½ cup (50 g) grated Parmesan cheese
½ tsp (1 g) chilli oil
Salt & black pepper, to taste
1 tbsp (15 ml) lemon juice (optional)
Fresh basil or parsley, for garnish
Instructions:

Cook the pasta:
Bring a large pot of salted water to a boil. Add in the corn cobs
Cook the pasta until al dente according to package instructions.
Reserve at least ½ cup (120 ml) of pasta water, then drain.

Sauté the aromatics:
In a large skillet over medium heat, warm the olive oil.
Add the onion and cook until caramelized.
Stir in the garlic and cook for a few minutes. Then add I the corn kernels and cook for 5 minutes till softened

Blend the sauce:
Set aside 1/4 cup of sautéed corn kernels, then add all the sautéed ingredients into a blender with the reserved pasta water.
Blend until smooth.
Pour the blended corn mixture into the skillet
Stir in the remaining whole corn kernels for texture.
Toss with pasta:
Add the drained pasta, Parmesan, salt, and black pepper.
Stir until everything is well-coated and creamy. Add more pasta water if needed.
Finish & serve:
Drizzle over chilli oil and garnish with fresh herbs and extra Parmesan.
Serve warm.

  2. That's actually very kid friendly minus the pepper, and they're eating tonnes of veg! 😂
    I wonder what it would be like if you blend spinach, then blend roasted capsicum separately, then pour swirls of them in the pasta? It would look so pretty!
