  7. Make it even easier and forget salting to release the juice. It doesn't make a difference if you do it or not. I've had it both ways. Makes no difference.

  8. Just out of curiousity , we add salt so that we can get water off eggplant but then we wash it , though you put paper towel afterwards but won't water get into eggplant , I hope if it's a dumb question
