  1. I make kopytka/polish niocci, using boiled, regular potatoes. I let them rest for a day, than mash. In a bowl i divide them in 4 pieces. Remove one and evenly distribute on top of other 3. I put flour in empty place, 1/4 of total mass, one egg, salt and mix it. I just cut pieces, no need for a fancy rolling. Then I boil them for a few minutes. My trick, very useful learned from Ukrainians, add a bit of starch flour mixed with cold water to boiling water. It helps to cook kopytka nicely not folling a part. Every time you get different ingredients, once better next time worst. Hart to tell and starched water helps for a genle cooking.

  3. Sorry Gordon but in Italy we boiled the gnocchi and than move to the pan to give them a crispy taste, in your way you will eat raw burned gnocchi, you should to keep the original recipe or people will think your is the original….but is not.
