My first time making pork belly burnt ends, and they turned out absolutely delicious.
Total Cook Time: ~4 hours
Smoker Temp: 250°F
Final Temp Before Saucing: 190°F
Ingredients:
• Pork belly, cubed
• Hog Honey rub by Meat Church (or your favorite sweet BBQ rub)
• Butter
• Honey
• Brown sugar
For the Sauce:
• Bachan’s Hot ‘n Spicy BBQ sauce
• Womp BBQ sauce
• Honey
(Mix to taste and desired consistency)
Step-by-Step:
1. Prep the Pork Belly:
Cube pork belly and coat generously with Hog Honey rub. All sides should have rub on them.
2. Smoke:
Place directly on the smoker or wire rack at 270°F for 3 hours. Pull once internal temp hits ~190°F.
3. Pan Phase:
Transfer to a foil pan. Add chunks of butter, a drizzle of honey, brown sugar, and more Hog Honey rub. Cover and let it go another 1.5 hours until caramelized and tender.
4. Sauce & Finish:
Mix Hot ‘n Spicy BBQ sauce, Womp BBQ sauce, and honey until you get that perfect sweet heat and sticky texture. Toss the burnt ends in the sauce, give it 10–15 more minutes uncovered if you want that tacky finish.
Result: Sticky, spicy, sweet, smoky perfection. First time making them—and they might be a new go-to.
