🐟 What is Salt-Crusted Fish?

Salt-crusted fish is a timeless way of cooking whole fish that has been used in Italy (and many parts of the Mediterranean) for centuries. By baking the fish sealed inside a crust of coarse salt and egg whites, you create a natural oven that steams the fish inside while keeping it incredibly juicy, flavorful, and aromatic. The salt doesn’t make the fish salty, instead, it protects and enhances its delicate taste.

This method is surprisingly simple, and once you try it, it might become your go-to for dinner parties or elegant weeknight meals.

1 whole fish

Coarse and fine salt

Lemon

Use fresh whole fish with skin and head on, it retains moisture better.

Don’t worry: the fish won’t taste salty. The crust acts as a protective layer.

Be gentle when cracking the crust to keep presentation clean.
