  1. I love the idea of this, it sounds amazing and I do something similar to start a cabbage ragu that my wife and I love in the winter. Because of that I know how much of a pain that huge hunk of cabbage is going to be to eat. Smaller bites would be my suggestion. Maybe figure out a way to shave it after the grill and pile it for height? You could even incorporate more of that smoked cream sauce as a drizzle or interspersed through the layers.
