

Another brisket I did for my daughters 17th bday, (she requested brisket, I mean, who wouldn’t lol) I have done five briskets before, but bought from a butcher, who did the trimming. This was my first time processing a full packers brisket. Was 19.5lbs, and took about 5 lbs off. Wonder what you guys think if I took too much fat off the top or too little. Turned out great (to me anyway haha). Took about 13 hours, plus 1 hour in the cooler to rest. 1st pic was just before I wrapped it (164°f, 10 hours in)
