Wine Wednesday: California Wine Institute explores how to craft cocktails with wine

JUST AROUND THE CORNER, AND THE UNOFFICIAL START TO SUMMER. THIS MORNING WE’RE COOLING OFF WITH THE CALIFORNIA FOOD AND WINE EXPERT. TAMARA BERG IS GETTING ALL THE DETAILS TO PUT TOGETHER A SEASONAL SUSTAINABLE WINE AND COCKTAIL BAR. YEAH, YOU KNOW, THIS IS THE TIME OF YEAR. IT’S THAT TIME OF THE YEAR WHERE WE START TO MAKE THAT TRANSITION INTO WHAT FEELS LIKE SUMMER, ESPECIALLY WHEN THE TEMPERATURES ARE CHANGING PRETTY ABRUPTLY. AND THEN YOU THINK ABOUT MAYBE BEING POOLSIDE OR BY THE LAKESIDE OR JUST BY THE PORCH AS YOUR BACKYARD. I EAT A MELON CAP IS WITH US NOW FROM THE CALIFORNIA WINES AND THE FINE WINES INSTITUTE, AND YOU’RE GOING TO TALK ABOUT WHAT WE HAVE AT PLAY HERE AND HOW WE CAN MAKE THINGS SIMPLE. YES, EXACTLY. SIMPLE. SO SIMPLE. IS THIS RIGHT HERE. IT IS A DIY FRUIT AND HERB WINE COCKTAIL BAR. OKAY, SO YOUR GUESTS COME AND YOU SET OUT THE SPARKLING AND THE SAUVIGNON BLANC, THE VERMOUTH, THE ZINFANDEL, WHATEVER YOU PREFER. RIGHT? AND THEN MIX AND MATCH WITH SEASONAL FLAVORS AND THEN ACTUALLY, OUT OF THE SIMPLICITY, WE CAN MAKE THESE FOR COCKTAILS. WE HAVE HERE. REALLY? YES. AND ACTUALLY ALL THESE RECIPES ARE AT DISCOVER CALIFORNIA WINES.COM. I WILL SHOW A COUPLE OF MY FAVES. YES, PLEASE. I CAN SMELL IT. IT’S SO FRAGRANT AS WELL. THIS ONE HERE IS SO CAL CITRUS SANGRIA. SO TOTALLY MAKE AHEAD OKAY. AND THEN THIS ONE OVER HERE. I THINK YOU’RE PARTICULARLY GOING TO LIKE IT’S A CUCUMBER HERB SPRITZER. YOU CAN ADD IN THE BASIL AND THE MINT IF YOU PLEASE. AND THEN I HAVE TWO MADE WITH SPARKLING WINE. AND I SHOULD SAY THAT ALL OF THESE ARE MADE WITH CALIFORNIA SUSTAINABLE WINES. SO IF YOU’RE REALLY FOCUSED ON THAT, THAT IS LIKE ABSOLUTELY POSSIBLE BECAUSE THESE DAYS, 90% OF CALIFORNIA WINES ARE MADE IN A CERTIFIED SUSTAINABLE WINERY. SO THAT’S A HUGE STATISTIC FOR SURE, RIGHT? CAN YOU SHOW US REAL QUICK WHAT WHAT THIS IS GOING TO 100%. SO THIS IS A STRAWBERRY CITRUS SMASH. I LITERALLY HAVE SOME STRAWBERRIES AND SOME CITRUS PER THE NAME ICE. AND THEN YOU’RE JUST GOING TO TOP IT WITH SOME SPARKLING WINE. AND THAT’S AS SIMPLE AS THAT. THAT’S SIMPLE. REALLY REFRESHING, REALLY EASY TO MAKE. AND YOU CAN PUT ANY BERRIES YOU WANT. SO YES, RASPBERRIES, BLACKBERRIES, WHATEVER. SPEAKING TO YOU. YOU KNOW, WHAT I LOVE TOO IS A LOT OF TIMES I’LL CUT UP FRUIT FOR MY FOUR YEAR OLD SON, AND THEN I HAVE LEFTOVER FRUIT SO YOU CAN REALLY REPURPOSE FRUIT, HERBS, PUT IT INTO A COCKTAIL AND ANY LEFTOVER WINE.
