Cheesy Meatball Subs

Ingredients

2 cups good-quality marinara sauce
One 8-ounce block mozzarella
12 raw premade pork and beef meatballs (found at the meat counter in grocery stores)
8 tablespoons salted butter, softened
3 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper
1 cup whole milk
1/2 cup grated Parmesan
4 sub rolls
1/2 cup jarred banana peppers
2 tablespoons minced fresh parsley

Directions

Preheat the oven to 425 degrees F.

Pour the marinara sauce all over the bottom of a 9-by-13-inch baking dish.
Cut off one third of the mozzarella and cut the third into 12 small cubes. Grate the remaining mozzarella and set aside.

Stuff each meatball with a mozzarella cube, pinching and rolling each to seal the cheese in the center. Place the stuffed meatballs in the baking dish and bake until well browned and cooked through, 22 to 24 minutes.

Meanwhile, make the cheese sauce by melting 4 tablespoons butter in a small saucepan over medium heat. Whisk in the flour to make a roux, season with a pinch of salt and pepper and cook, whisking, for 1 minute. While constantly whisking, slowly add the milk. Add the shredded mozzarella and Parmesan, then stir until completely melted. Cover and keep warm until ready to serve.

Spread the insides of the rolls with the remaining 4 tablespoons butter. Toast them butter-side down on a large skillet or griddle until golden, 1 to 2 minutes. Set aside.
Add 3 meatballs to each of the toasted rolls. Top with a good amount of the cheese sauce, some banana peppers and a sprinkle of parsley to finish.

Ree Drummond’s Cheesy Meatball Subs | The Pioneer Woman | Food Network

We are all about dads today. Who doesn’t love a dad? Did that question make sense? This show is called Dad Friendly Dining and the first recipe is a total [Music] winner. I am making a batch of cheesy meatball subs. They have dad written all over it. They have lad written all over it. And I’m going to start with the meatballs now. So, I poured some marinara sauce into a baking dish. And these are cheesy meatballs. So, I have squares of mozzarella cheese, cubes of mozzarella cheese. And I got some readymade meatballs. And these are pork and beef, but you can obviously make your own meatball mixture. So, I’m just going to press this piece of mozzarella right into the center of the meatball. And then just use my fingers to kind of enclose the cheese. And then it’s as if you never saw the cheese. I have some good news. Lad is going to be up here at the lodge later today and I’m going to share some of this yummy food with him. We love to see Lad in the Drummond and Ranch kitchen. Okay, I got the meatballs stuffed and I put them into the marinara sauce. So, let’s go put this in the oven, Alex. These are going to bake at 425° for about 22 to 24 minutes until they’re totally cooked. And in the meantime, I’m going to start making a cheese sauce that’s going to go on top of the cheesy meatball subs. This is one of those recipes. It’s just like so many layers of flavors and ingredients. They are going to be so good. So, I have a saucepan with butter that I melted. And I’m going to sprinkle in some flour and add salt and pepper. And I’ll give this a whisk. The r is all cooked. And I’m going to add some milk and stir this together. And it was so hot that it’s already starting to bubble. That didn’t take long at all. So, I’m going to turn the heat down. And I’m going to add a bunch of mozzarella cheese. This is a cheesy cheesy cheese sauce. And some grated Parmesan. And I’m going to save some of this back to serve the subs later. All right. So, I’m going to stir the cheese in and give it a chance to melt. Look at this white sauce. Woo! It’s cheesy cheesy. I’m going to stir it for a little longer. Let it thicken first. Turn on the heat under the grill pan. And I have some sub rolls. And I’m not going to split them open and grill them. I’m just going to put them kind of face down on the grill pan just so they have nice grill marks and get a little bit heated up before I build the subs. Okay, look at these meatballs. Oh my gosh. I love that they’re just submerged in the sauce. And look at this one that kind of oozing. Busted loose and started oozing. Oh, it just smells heavenly. So, I’m gonna save most of the meatballs for when lad gets here, but I’m going to build one of these so you can see the absolute beauty. So, you can see the little grill marks on the top of the sub just to give it flavor. And I’ll go ahead and get the meatballs on here. Whoa. My goodness. I’m going to do three meatballs per sub. One, two. Yeah, I’ll do this cheesy one just so it drives the point home. And then definitely get spoonfuls of the marinara. Uh-oh. Cheese string. Cheese on the loose. Are you with me here, Alex? Yep. Okay. Sauce and banana peppers, which I think make any sort of sub sandwich delicious. And you can really pile these high. You could do jalapenos if you want more heat. Next, I know this is the part you’re really waiting for. This is the star of the show. The cheese sauce. First of all, here’s the cheese sauce. Oh my goodness. And here’s the cheese sauce on the sandwich. Again, you can use as little or as much as your heart tells you to do. Oh my god. It looks so good. And then some parmesan. And I like a bit of green just to set off that gorgeous cheesy sauce. How does it look? Delicious. M. I can’t even close it. I won’t even try. All right. Cheesy meatball subs. This is dad friendly dining if I’ve ever seen it. with everybody.

  2. I use hot Italian sausage with sauteed onion, peppers, mushrooms, tomato, then add mozzarella and cheddar! 😋

  3. I use meatloaf mix for my meatballs with beef, prok, and veal. The veal is important for taste and mouth feel.
