Range of hydration for the dough please? Seems a bit on the dry side in the video but I guess it's easier for newcomers.

Anyone try this recipe? I donβt think it said the amount of measurement for salt or yeast also should prob mention hydration for curious folks lol which will be everyone who even knows a little bit about pizza dough . β€
Try to use east coast water. West coast water is garbage to make anything with
the numbers in video give 56% hydration while the linked recipe is 60%.
In Every video I see about pizza dough they say to not mix salt and yeast together..so I am wondering who's right and who's wrong. .
Or it doesn't matter at all ?
The recipe has lots of issues: don't use luke warm water for Neapolitan dough(the gluten structure is developing around 23 celsius), with that amount of yeast the dough will rise like a beast and you need less amount from the fresh yeast than from the dry one.
This video is like a trailer for a recipe. Wish they had the recipe in the video or even description as well as in their link.
