


I blew myself away. All I did was use mustard one side, soy sauce on the other as binders. Season with layers. Garlic Jalapeno, a flaky steak seasoning, cracked pepper. Marinate for 30 mins. Traeger at 210° for about 1.5 hrs reaching 110 internal. Got my small Coleman gas camp grill piping hot. Seared each side 2 minutes. Let rest 15 minutes. Best beef I've ever had. Does it look like a nice medium rare?

Additional: For the rest period I glazed it with melted seasoned butter. Wrapped in foil. Temp after sear was about 125°
Best one I have ever seen. They usually come out so dry.
Nicely done. Might have rested it a tad longer, but good cook.
