Ingredients

  • 8 cups self-rising flour
  • 4 tablespoons baking powder
  • ½ teaspoon salt
  • 4 tablespoons sugar
  • 1 ⅓ cups solid shortening
  • 3 ¼ cups buttermilk
  • Melted butter

    36 biscuits

    Preparation

    1. Heat oven to 450 degrees.
    2. Sift first 4 ingredients together. Cut in shortening until mixture resembles coarse crumbs. Add milk all at once. Mix briefly with fork to form soft ball.
    3. Place dough on lightly floured surface, rolling or patting into rough circle about 1/2 inch thick. Using 3-inch biscuit cutter, cut into 36 rounds.
    4. Bake on ungreased cookie sheet for 10 minutes. Brush tops with butter and bake 3 to 5 minutes longer.
    • Since these are truck-stop recipes, serving portions are larger than for home consumption.
