Dry brined a bunch of wings over night with just a dusting of kosher salt. Smoked at 225 degrees with hickory wood for almost 2 hours till they hit 170 degrees. I let them rest on the counter before chilling them in the fridge. Fried them at 350 degrees for 2-3 minutes.

For the sauce I melted 4 TBLS of butter then added 5 cloves of minced garlic, black pepper, crushed red pepper, and a full stalk of rosemary. Right before the wings were finished frying I added the zest of 1 lemon and shredded Parmesan cheese. Tossed the wings in the sauce and I added just a touch more Parmesan and zest. Bonus picture of my garlic Parmesan hot wings. Too me smoke-a-fried wings are the best.
