


First time I have done pork ribs.
I picked up the pork seasoning at an Ace Hardware, they were buy two get one free and I took a chance on it.
The sweet baby ray’s was we had bought two big bottles and I wanted to use what I had at home before spending more money on a sauce although I found a recipe for a bourbon chipotle sauce I may try next time.

225 uncovered for 3 hours, 225 covered for two, 225 uncovered for an hour after saucing.
They were look dry so I spritzed them every 30 minutes with ACV.
Congrats on your first cook. They look great. There really is no correct way to do them, but a few things i have learned over the years:
– finding even ribs with good meat dispersement, try to find a slab that is uniform in size to avoid one end being different than the other
– 275 for 2 to 2.5 hours, wrap for an hour to 1.5 hours, sauce, then back on for 15 for tack is a great method
– for bbq sauce, when you go to buy next, try meat Mitch whomp sauce, or blues hog competition cause or raspberry chipotle, those are the best in the game
– i have grown to love the meat church seasoning lineup, give it a try.

Love the balance of thermometers, but you really don’t need them. I’ve done this method a thousand times and have never understood cooked them. Use your therma pen during the saucing if you’re worried. Just trying to save you some time
